Step 1: Make Clear Ramen Broth
Ingredients
* 1 lb ground chicken
* 4 egg whites
* 2 celery stalks
* ¼ head cauliflower
* 1 leek (just the white part)
* 1 white onion
* 1 tomato
* 1 tsp salt
* ⅔ tsp white pepper
* ¼ tsp MSG
1) Whisk egg whites in a separate bowl until fluffy. Add in the celery, cauliflower, tomato, white onion, salt and peppercorn to the food processor and combine with the chicken and egg whites. Add to the bottom of your pot.
2) Add water. Turn to medium heat. Do not boil.
3) The raft will slowly ascend to the top of the pot. Create a hole in the middle and begin to agitate the raft by pouring it over the stock. Once the stock looks clear, put through a cheese cloth lined chinois.
4) Once put through the chinois, pass through a coffee filter.
5) Add msg.

Step 2: Make Clear Noodles
Ingredients
* 1 cup mung bean starch
* 6 cups water, divided into 4 cups and 2 cups
1) Combine the starch into 2 cups of water.
2) Boil the 4 cups of water.
3) Add the starch/water mixture to the boiling water.
4) Mix until thickened and jelly-like.
5) Pour into a heat safe glass container.
6) Allow to set for 24 hours.
7) Remove from the container and use the zester to create long, thin, noodles.

* Plastic lined loaf pan

Step 3: Make Clear Egg
Ingredients
* 1 envelope Gelatin
* ¼ tsp Kala namak
* 2 g Agar Agar
* 2 g Egg yolk powder
1) Add gelatin and 250 ml water together. Toss in a pinch of the kala namak.
2) Add in the egg mold. Allow to set.
3) Once partially set, place a hot melon baller on the lower part of the egg and add in the agar mixed with the egg yolk powder.
4) Allow to fully set.

Step 4: Assembly
Ingredients
* Clear broth
* Clear noodles
* Clear egg
1) Heat up broth.
2) Put in a bowl.
3) Cook noodles in boiling water for 1 minute. Add the noodles to the bowl.
4) Top with egg.
5) Enjoy.
